Description
Black rice is a unique and surprising variety, known for its intense color, which can range from deep purple to ebony black. It is naturally whole grain, just like red rice, and is particularly appreciated for its aromatic fragrance, with notes reminiscent of freshly baked bread or hazelnuts, and for its high nutritional value.
Processing
Black rice is not subjected to whitening or polishing: its pericarp, the outermost layer of the grain, contains the dark pigments (anthocyanins), fiber, and many of the nutrients. Any further processing would diminish its qualities.
The result is a whole grain with a dark color and characteristic aroma.
Curiosity
Its origins can be traced back to ancient Asian varieties, often called “forbidden rice” because, according to legend, it was reserved for Chinese emperors due to its beneficial properties.
Today, black rice is also cultivated in Italy, especially in Piedmont and Lombardy.
