The Extra Legume Soup has an intense taste and a perfect harmony of flavors: a 100% natural dish that reinterprets a recipe of peasant cuisine.

Combinations:
This soup was prepared in peasant houses for dinner and eaten hot with a good glass of wine, the same was brought by the farmers to the fields and eaten cold during the hot summer days for the particular contribution of vegetable proteins, fibers and its lightness.

Ingredients:
Classic wholemeal Carnaroli rice (20%), borlotti beans, black-eyed beans, cannellini beans, red adzuki, split peas, red beans, chickpeas, green adzuki (in varying proportions 80%).

Preparation:
• In the pot: soak the desired amount of preparation for at least 8 hours, rinse and pour it into a large pot; Add 700 ml of water per 100 g of product, bring to a boil and cook for 45/50 minutes over low heat, if necessary add hot water, salt to taste.
• In a pressure cooker: cooking times and water are reduced by half.

Cooking time and servings:
45-50 minutes; dose for 6 people.
