Obtained exclusively from controlled seeds and certified as “CLASSICO”, our Baldo maintains the distinctive characteristics of the original variety, guaranteeing quality and authenticity. Thanks to its high capacity to absorb seasonings and release starch during cooking, it is particularly appreciated for the preparation of creamy and blended risottos.
Curiosity:
Baldo is mainly grown in the areas of Vercelli, Novara and Pavese. Despite being less well-known than other strains, it has gained popularity in recent years due to its excellent culinary qualities.
Combinations:
Thanks to its excellent ability to absorb seasonings by releasing starch during cooking, Baldo Classico Rice is recommended for most risottos that will be creamy and amalgamated with a perfect harmony between the rice and the seasonings. It is also optimal for timbales and rice salads and being so versatile it is very pleasant consumed in vegetable broth and traditional soups.
