Description
Brown Carnaroli Rice, a more rustic and nutritious alternative, obtained through minimal processing that leaves the heart of the grain intact.

The result is a browned, more compact and consistent grain, with a stronger aroma and a slightly nutty flavor.

Our Classic Carnaroli rice is obtained exclusively from controlled and certified seed as “CLASSIC” and as “CARNAROLI FROM PAVIA CARNAROLI”.

Processing
To obtain Brown Carnaroli, the rice undergoes hulling, which is the removal of the husk, the inedible outer coating. This process happens mechanically, using hullers that gently rub the grains to free them from their outermost shell, without affecting the inner layers.

And this is where the process stops. Unlike white or semi-processed rice, Whole Grain Carnaroli doesn’t undergo further processing. It remains as it is: with its pericarp (the outer layer rich in fiber), the germ (which contains precious oils and micronutrients), and the inner starchy part. This way, you get a rice that’s much more complete from a nutritional point of view, with a higher content of B vitamins, antioxidants, minerals, and dietary fiber.
