Description
S. Andrea Classic rice is a typical variety from the rice fields of Piedmont, particularly common in the provinces of Vercelli and Biella. It’s a medium-grain rice, highly valued for its versatility, good cooking resistance, and ability to absorb flavors.

Refined Sant’Andrea Classic rice is a product that represents the culture and rural cuisine of northern Italy, perfect for those who love authentic flavors and traditional, well-creamed dishes.

It has smaller, tapered and long grains compared to Carnaroli, with a glassy and compact structure.

Our S. Andrea rice is obtained exclusively from controlled and certified “CLASSIC” seeds.

Processing
Sant’Andrea Classic rice is the result of genetic selection from the Rizzotto variety, developed in 1974 by the National Rice Authority of Milan. Today it is mainly cultivated in the Baraggia Vercellese area and in Lomellina, a region traditionally devoted to rice cultivation due to its tradition and soil quality.
Curiosity
S. Andrea Classic rice is the preferred rice in the Vercelli area for preparing Panissa, the traditional risotto with beans, salam d’la duja (preserved salami), and onion: a humble dish rich in flavor and history.
